Sea Scallop Risotto
Whether serving on pasta, dressed greens, or creamy risotto the key to sea scallops is a good hard sear. Simply pat them dry beforehand, add to a smoking hot cast-iron pan, and avoid flipping until the flesh is opaque and the edges are caramelized.

Lobster Mac and Cheese
The best lobster is fresh lobster, so that means cooking your own for this recipe. For convenience, have the fish market steam one for you. Once cool, shell and coarsely chop the meat from the claws and tail. You can also use all tail meat for this recipe. It takes about three lobster tails to get a pound of meat.
